Method Steps
1.
Mix chicken with salt, ginger paste, garlic paste, and stock powder (if using) and leave to marinate. If left in fridge to marinate, bring to room temperature before cooking.

Heat oil until hot and sauté onions until golden and feel light when you scoop it up. This is important so onions will disintegrate and form the gravy.

Add curry leaves, mustard seeds, fennel seeds, lemon grass, and whole spices (if using). Sauté for 2 minutes.

Add marinated chicken. Cover and cook until chicken changes color.

Add chilli powder and roasted ground spices (if using). Stir and cook on LOW heat until no liquid remains. This is important to make a thick gravy.

Add 1/2 cup hot water and let it cook down on low to medium heat. Adjust water to ensure the gravy is thick or thin as desired.

If onions are not fully disintegrated into gravy, add 1/2 cup more water and let it cook down.
